The cooling process in the final stage of hot forging, which critically determines the hardness and microstructure quality of steel, especially in the manufacture of knives that require a combination of hardness and toughness. The study aims to analyze the effect of various cooling media on the mechanical properties and microstructure of steel through a systematic literature review approach. The method used is a systematic literature review by examining scientific studies related to the relationship between cooling rate, phase transformation, and the mechanical properties of steel after heat treatment. The review results show that cooling media with high cooling rates, such as water, can produce the highest hardness values but may cause cracks due to thermal stress, while oil provides a more stable martensitic structure without significant defects. Alternative media like banana stem sap and sodium hydroxide-based solutions also show increased hardness with variations in toughness influenced by concentration and heating parameters. Overall, this review confirms that selecting the right cooling medium is very important to achieve optimal knife quality and can serve as a basis for developing more standardized heat treatment processes in the metal manufacturing fiel
